In this video, Betty makes the original Fritos Chili Pie Casserole for her family. The recipe originated either with the Frito-Lay Company or Sonic Drive-In Restaurants, where it was once served. If you like chili, cheese, and Fritos, youll *love* this recipe! Ingredients: 3 cups Fritos corn chips 1/2 large sweet onion, chopped (Note: I used 1 whole large onion in my video, but I think most people will like this recipe better with 1/4 to 1/2 onion, chopped—unless you *really* love onions!) 15 oz. can chili (either with beans or no beans) 1 cup grated American cheese (I used Velveeta.) Place 2 cups of Fritos corn chips in a baking dish. Arrange chopped onion and half of the grated cheese on corn chips. Pour chili over onion and cheese. Top with remaining corn chips and grated cheese. Bake at 350 degrees for about 15 minutes, until cheese is melted and corn chips on top are beginning to brown. Serve immediately. This is a great dish for kids!!! In this video, Betty demonstrates how to make a luscious Brown-Sugar-Topped Baked Sweet Potato to accompany her Southern dinner, including Pecan Crusted Oven Broiled Chicken Breasts, Country-Style Pressure Cooker Green Beans, Morning Coffee Blueberry Muffins, Perfect Pound Cake with Sugar Glaze Topping with Crispy, Sugary Nuts, and Triple Chocolate Frozen Ice Cream Pie (all in other videos, or videos to come soon). Ingredients: 1 (red or white) sweet potato, medium and uniformly-sized cooking oil spray salt (I used fresh ground sea salt.) 3 tablespoons butter, softened to room temperature 1/4 cup light brown sugar Place the sweet potato on a piece of aluminum foil that is large enough to wrap it for baking. Spray the top and bottom of the sweet potato with cooking oil spray. Sprinkle (or grind) salt on the outside of the sweet potato. Place the sweet potato diagonally in the center of the aluminum foil. Wrap the aluminum foil over the top and up at the ends, so that there will be no leaks from the potato in your oven. (I put the wrapped potato on a baking dish.) Place the wrapped sweet potato in a 350 degree oven, and bake for approximately 1 hour, or until soft when squeezed. (Use a potholder to squeeze.) While your sweet potato is baking, make your Brown Sugar Topping: Mix 3 tablespoons softened butter with 1/4 cup brown sugar until smooth. Place in a small serving bowl. In rhis video, Betty demonstrates how to make her sweetly divine Morning Coffee Blueberry Muffins. They are just the right texture and flavor--not too sweet, because the fresh blueberries take care of that! Ingredients: 1 egg, well beaten 1/2 cup sugar 1/2 cup vegetable oil (I used canola oil.) 3/4 cup milk (I said 2/3 cup in the video, but 3/4 cup will be better.) 1/2 teaspoon ground cinnamon 1 teaspoon vanilla 2 cups self-rising flour 1 cup fresh blueberries, washed and dried with paper towels cooking oil spray Mix all ingredients, except blueberries. Gently fold in 1 cup fresh blueberries. Spoon into muffin tins that have been sprayed with cooking oil, until 3/4-full. Bake at 400 degrees for 18 to 20 minutes. When done, a toothpick inserted into the center will come out clean. Note: If you prefer not to spray the muffin tins, place a paper baking cup liner for each muffin. These are really great muffins--enjoyable for everyday, but elegant enough for company!

In this video, Betty demonstrates how to make light Baked Coconut Shrimp with Jamaican Jerk Seasoning (with the "help" of her grandson, Carter). This is a great alternative to fried shrimp. The shrimp is dredged in a Jamaican jerk seasoning mix, then dipped in egg white, dredged in a mixture of coconut, panko breadcrumbs, and paprika. Finally, it is sprayed with cooking oil spray and baked in the oven to a golden brown. Ingredients: 1 pound unpeeled, raw large white shrimp 1 to 2 egg whites ¼ cup cornstarch 1 tablespoon Jamaican jerk seasoning 2/3 cup sweetened flaked coconut 2/3 cup panko breadcrumbs 1 teaspoon paprika cooking oil spray Wash and peel 1 pound of shrimp, leaving the tails on, and set aside. In a small mixing bowl, beat or whisk 1 or 2 egg whites until frothy, and set aside. In a small, shallow dish, mix together ¼ cup cornstarch and 1 tablespoon Jamaican jerk seasoning, and set aside. In another small, shallow dish, mix together 2/3 cup flaked coconut, 2/3 cup panko breadcrumbs, and 1 teaspoon paprika, and set aside. Dredge shrimp, one at a time, in cornstarch mixture. Dip in egg whites, and dredge in coconut mixture. Place the shrimp on a broiler pan that has been sprayed with cooking oil spray. When all shrimp are placed on broiler pan, spray the top of the coated shrimp with cooking oil spray. Bake in a 425 degree oven for 10 to 12 minutes. (I baked mine for 10 minutes, and then turned the oven off and let them sit in the oven for a couple of minutes ...

Betty demonstrates how to make the perfect loaded baked potato in this video. Ingredients: 2 large Idaho baking potatoes, washed and dried cooking spray sea salt 1/2 stick butter or margarine at room temperature 1/2 cup sour cream 1 cup shredded Cheddar cheese 1/4 cup snipped green onions Heat the oven to 400 degrees. Cut off an appropriate length of aluminum foil for wrapping each potato. Place each potato on its piece of foil, spray with cooking spray, and grind some sea salt all over the potatoes. Wrap each potato in its aluminum foil and place in the 400 degree oven to bake for 1 hour and 15 minutes. While the potatoes are baking, prepare the following topping. In a medium-sized bowl, mix 1/2 stick butter or margarine (room temperature), 1/2 cup sour cream and 1 cup shredded Cheddar cheese. After mixing these three ingredients, add the 1/4 cup snipped green onions and blend in lightly. Remove the 2 potatoes from the oven, test for doneness by rolling them in your hand (with a potholder). They should feel slightly soft. Remove the foil covering them, and transfer each potato to its serving dish. Salt and pepper the potatoes to taste. Place a generous amount of topping on the top of each potato. Eat immediately while hot and delicious!

In this video, Betty demonstrates how to make a Baked Potato with Taco Topping. This recipe is for 4 large baking potatoes, but you can make fewer, and save the remaining topping for tacos! Ingredients: 4 large baking potatoes Cooking oil spray sea salt, to taste 1 pound lean ground beef ½ cup chopped onion ¾ cup water 1 ½-oz. package taco seasoning mix 1 cup taco sauce 1 cup shredder pepper jack cheese Wash baking potatoes and pat dry with paper toweling. Place each potato on a square of aluminum foil that is large enough to wrap the potato thoroughly. Spray each potato with cooking oil spray, and then sprinkle with sea salt (or regular salt). Place each potato diagonally on a foil square and bring up the edges of the foil to wrap potato tightly. Place wrapped potatoes in a baking pan and bake in a 400-degree oven for approximately 1 hour and 15 minutes. Check for doneness, by using a potholder and squeezing the potato. If it is softened, then it is ready to remove from the oven and prepare for topping. Meanwhile, prepare the topping. In a large, deep skillet, brown 1 pound lean ground beef with ½ cup chopped onion, stirring constantly, until beef is brown and crumbly and onion is soft and clear. Stir in ¾ cup water, and a 1 ½-oz. package of taco seasoning mix. Bring to a boil. Reduce heat, and simmer, uncovered 5 minutes, or until liquid is absorbed, stirring occasionally.
