No more, now that we've seen how easy it is to make chicken pot pie, with a little help from our friend, Pillsbury's Lauren Chattman. Recipe: How to make easy chicken pot pie 1. Heat oven to 425°F. Fit pie crust into 9-inch glass pie plate. 2. In 2-quart saucepan, melt butter over medium heat. Add onion; cook and stir 2 minutes or until tender. Stir in flour, salt and pepper until well blended. Cook 2 to 3 minutes, stirring constantly. 3. Gradually stir in chicken broth and milk, cooking and stirring until bubbly and thickened. Stir in chicken and thawed mixed vegetables. Remove from heat. Spoon chicken mixture into crust-lined pie plate. 4. Top with second crust; seal edge and flute. Cut slits in several places in top crust. 5. Cover crust edge with 2- to 3-inch-wide strips of foil to prevent excessive browning; remove foil during last 15 minutes of baking. 6. Bake 30 to 40 minutes or until crust is golden brown. Let stand 15 to 20 minutes before serving. Pillsbury's chicken pot pie recipe serves six. Ingredients: 1 pound cooked leftover turkey breast, cubed (about 2 cups) 1 cup leftover turkey gravy (or prepare a packaged mix of turkey gravy) 14.5 oz. can chicken broth 2 tablespoons cornstarch (In the video I mistakenly said 2 teaspoons. It is 2 tablespoons.) 15 oz. can mixed vegetables, drained 1 unbaked 9-inch deep-dish pie crust, thawed 1 round of prepared pie crust for top of pot pie (You can find this at your grocery store already made, or you can make it yourself--see Betty's Basic Pie Crust Making) Freshly ground pepper, to taste In a medium pot, combine 14.5 oz. chicken broth with 2 tablespoons cornstarch. Turn on the heat and cook, stirring constantly until translucent. Add in 1 pound leftover cubed turkey and 1 cup leftover turkey gravy. Stir until combined, and then add 15 oz. canned mixed vegetables. Cook this mixture until the turkey, gravy, and vegetables are bubbly and heated through. Recipe: How to make a pie crust Gather your ingredients and tools: * 1 cup all-purpose flour * 4 ounces cold butter * ¼ cup ice water * ½ teaspoon salt * ½ teaspoon sugar * Fork * Rolling pin * Pie plate Making the pie crust: 1. Mix the dry ingredients (salt, sugar and flour) together. You can do this in a bowl, or a mixer, but ideally on a marble surface. (Marble is best because it keeps the ingredients cold, and cold ingredients are the key to producing a tender, flaky pie crust.) 2. Place the mixed dry ingredients in the center of your preparation surface. 3. Dice the butter into small pieces and cut it into the dry mixture with a fork to ensure that you make a flaky pie crust.
