Hi there! In this video, I show you how to make a dairy-free, SCD friendly strawberry mousse. There are no eggs used in this recipe, except for the yolks in the custard that is used instead of yogurt. Ingredients used: 3 cups sliced, fresh strawberries, quartered lengthwise (about 1 lb. strawberries) 1/2 cup cold water 2 tbsp. gelatin 1/4 cup orange juice (not from concentrate) 1 tbsp. lemon juice 1/2 cup honey 1 1/2 cups cold, dairy-free custard (see links) 1 tsp. vanilla extract How to make the dairy-free custard: www.youtube.com Note that I posted the custard video again (I first uploaded it earlier this year in January), since it somehow disappeared even though I don't remember deleting it. Add shredded agar agar. Put brown sugar. To prepare: Put ground macadamias on a glass add strawberry mousse on top then repeat. Put sliced strawberries on top for garnish.
